The difference between dark and light corn syrup is that dark corn syrup is made with refiners syrup which is a specific type of molasses. Simply pack in of any kind of brown sugar for every cup of molasses and you ll get almost the same flavour. Use 1 cup of maple syrup in place of 1 cup of molasses it doesn t taste the exact same but it has a similar consistency and is less processed than dark corn syrup. It will last 3 4 months in an airtight container at room temperature.
