Depending on how much of each of these is found in a food. It takes the body longer to digest complex carbs than to process simple carbs. Simple carbohydrates are easily digestible and absorbable by the body. But complex carbohydrates take time for digestion.
Complex carbohydrates normally have a higher nutrient value than simple carbohydrates. Complex carbohydrates are polysaccharides such as starch. Therefore the main difference between simple and complex carbohydrates is their complexity. Most carbohydrates can be broken down by digestion into glucose and these are the carbohydrates we shall look at in this article.
Fiber starch and sugar. Simple carbohydrates are monosaccharides and disaccharides. Most of the calories we consume come from simple carbohydrates. Complex carbohydrates known as oligosaccharides and polysaccharides are made up of longer more complex chains of sugar molecules.

Some complex carbohydrate foods contain fiber vitamins and minerals and take longer to digest. Complex carbohydrates are present in foods such as bread and pasta. Simple carbohydrates are sugars while complex carbohydrates are starches. Complex carbohydrates take longer to digest and are a more stable source of energy than simple carbohydrates.
Not so healthy carbs also known as simple carbs will be broken down and absorbed by your bloodstream fast.
