It can be as simple as thin sliced steak topped with cheese or it can be kicked up with the addition of onions peppers mushrooms and any other topping you can think of. Chris recommended skirt steak which is more reasonable priced but since my grocery store didn t have it i went with top sirloin. As a person who actually sells philly steak meat to many of the national chain accounts and most of the cheesesteak accounts around the philly area the raw material used to make a true philly steak is knuckle meat or wedge meat.
