The big difference between refined and unrefined coconut oil then is the way in which the oil is extracted and how it s subsequently processed.
All coconut oil is extracted from the meat of the coconut. Virgin coconut oil retains a distinctive flavor and odor of coconut whereas refined coconut oil is tasteless and odorless. Virgin coconut oil retains more nutrients than refined coconut oil. Refined coconut oil on the other hand is neutral.
Both refined and unrefined coconut oils have the same nutritional benefits. While refined and unrefined coconut oil have essentially identical nutrient profiles they re otherwise remarkably different. Refined coconut oil has 450 degrees fahrenheit smoke point while the unrefined coconut oil has 350 degrees smoke point. Refined coconut oil has a milder scent and flavor but a higher smoke.

Refined coconut oil is more processed than unrefined. Refined coconut oil goes bad faster than virgin coconut oil. Virgin coconut oil is more expensive despite being less processed. Both refined and unrefined coconut oils have the same nutritional benefits.
