Mixing milk and butter creates a substitute for heavy cream.
Evaporated milk is an easy substitute. Evaporated milk contains less fat but is creamier than regular milk so you ll get full flavor and body for fewer calories and less fat than regular heavy cream. You ll need the real thing for that. To make 1 cup of heavy cream melt 1 4 cup of butter and slowly whisk in 3 4 cup milk.
This works for most recipes that require heavy cream but it will not whisk into stiff peaks. To replace heavy cream or heavy whipping cream use half a cup of greek yogurt and half a cup of whole milk. If you have butter and milk whole milk and half and half work best you can make your own heavy cream substitute. You can buy coconut cream as is or you can get some by throwing a can of coconut milk into the fridge overnight and separate out the cream that forms from the liquid.
You actually use the heavy cream to melt your chocolate when making a traditional ganache. Evaporated milk and vanilla extract can be used as a substitute for heavy whipping cream in soups and sauces and frosting for cakes and cupcakes. If you re vegan or lactose intolerant coconut cream makes a nice plant based sub for heavy cream. Add vanilla extract to taste.

Heavy cream contains more fat than milk does so a combination of butter and milk can act as an excellent replacement in many recipes. Just replace 1 cup of heavy cream for 1 cup of evaporated milk in any recipe that calls for liquid heavy cream not whipped. Simply remove the lumps by blending it with an immersion blender or food processor. If you re only using greek yogurt then use of a cup for every cup of cream.
Cottage cheese alone can be a good substitute for heavy cream to help add thickness to recipes like sauces.
