What Is The Difference Between White And Yellow Cake
Olivia Luz

The recipes i currently use on my job the white cake is more of a buttery or creamy flavor where as the yellow is more of a vanilla.
Vanilla cupcakes with lemon buttercream. If it contains only egg whites it s a white cake and if it contains whole eggs it s a yellow cake. Yellow cakes typically call for all purpose flour which gives the batter a thicker denser structure. The extra fat added from the egg yolks also contributes to the cake s texture making it.
When it comes to the dry ingredients white cake also tends to call for cake flour which includes corn starch while a classic yellow cake requires bleached all purpose flour. White cake uses only the egg whites and makes the the cake more finely grained. Yellow cake uses the whole egg whites and yolks producing the yellow color and the smoother airier batter. The white variant uses ordinary flour and only egg whites.
The combination of the two creates the batter s signature yellow color while maintaining a neutral flavor. When you do come across a recipe that s specifically called vanilla cake and not white or yellow cake look closely at the ingredients. White cake is made with only egg whites. Like if it is just yellow cake or if its butter cake.

The extra fat added from the egg yolks also contributes to the cake s texture making it moister and a bit denser than a white cake. Yellow cake is made with whole eggs both the whites and the yolks no shells. Also because of the butter and the egg yolks yellow cake tastes richer than white cake.
