These work in a pinch if you need buttermilk for a recipe and don t have any on hand or if you have a recipe that calls for a small amount of buttermilk and you don t want to buy a whole container.
Measure out a scant cup of whole or 2 milk and add 1 tablespoon of lemon juice. For one cup of milk stir in one tablespoon of white vinegar or one tablespoon of lemon juice. Lemon juice is an acid you can use instead of vinegar to make buttermilk. So for every cup of buttermilk needed use 1 cup of plain yogurt.
I typically opt for 2 or whole milk and fresh lemon juice but bottled will also do the trick. Measure one tablespoon of white vinegar or lemon juice into a liquid measuring cup. Add one tablespoon lemon juice or white vinegar to a liquid measuring cup and add enough milk until it measures 1 cup. Stir and let sit for five minutes before using.
